Ingredients (serves 8-10)
1 can of Mexi-corn
1 cup of mayonnaise
1 cup of “Pepper Jack” shredded cheese
½ cup of Parmesan cheese
1 toasted jalapeño (if you like it spicy)
1. In the oven broiler, toast the jalapeño.
2. Remove the skin, inside vein and the seeds, then cut the jalapeños in very small pieces.
3. Using an oven safe dish, mix all ingredients with a spatula and spread it uniformly.
4. Bake at 350°F until it becomes a yellowish color, about 25 minutes.
Serve with tortilla chips.
